Jollof Rice

How to make JOLLOF
Jollof recipe 
7oz of vegetable/ canola / olive oil
7oz of blended ginger 
7oz of blended onions
5 Tsp of Powdered pepper (I like pepper)
21 oz of tomato paste 
4 2.5cups of jasmine rice
1Tsp of nutmeg
4 Tsp of curry powder
1 Tsp of adobo seasoning 
1/2 Tsp of salt to taste
2 cups of water


✔Season your meat and fry it on separately 
Now let's focus on the jollof
A deep wide pot is NEEDED ✔Medium fire please ‼
✔Pour the oil in the pot 
✔Add the 4 Maggi cubes
✔Stir till they all melt 
✔Add the onion and keep stirring for 6/7mins
✔Add ginger and keep stirring till it's a little brown 
✔Add pepper and keep stirring
✔ Allow it to cook for 5mins
✔ Add the tomatoes paste and keep stirring till it's all mixed
✔Add your curry powder, nutmeg, adobo and stir
✔lower the fire and allow it to cook for at least 20/25 mins
✔Wash and rinse your rice 
✔scoop at least 2/3 of stew into a bowl
✔Add your rice and stir till it all mixed completely 
✔ allow it to cook for 5mins
✔Add 2 cups of water and stir
✔cover the pot with aluminum foil then the lid
✔ Allow it to Cook for 10/15 mins
✔Stir and lower the fire 
✔Keep an eye on the food and just keep stirring every 10mins
✔Add the remaining stew after 45mins and stir
✔Allow it to cook for 30mins and add your meat then stir again
✔Add any veggies you would like to add and stir
✔Lower the fire and allow it to cook till the rice is well done.
P.S ➡ Do not add any extra water to the jollof, just allow the heat to do it job !
