Garden Eggs Stew !!
Garden eggs stew Recipe and Procedure
10 small garden eggs (You may substitute for 3 large egg plants. They have the same taste.)
1 onion (Thinly sliced)
2 plum tomatoes (A small can of tomato sauce is fine)
3 habanero pepper or 2 tbsp. of powdered pepper
2 cubes of Maggi
Chopped Kobi (A type of salted dehydrated fish from Ghana)- optional
1 tin of mackerel
1/2 cup oil (red oil)
3 medium eggs (beat)
Procedure
Boil your garden eggs in a separate pot with 2 cups of water for 10mins
While it’s cooking let’s focus on the Rest
In another pot, add your palm oil and place it on a medium heat
Allow the oil to heat for 2mins and add your Maggi cubes
Allow it to melt completely
Add your sliced onions and stir for 2mins
(Add the chopped kobi and stir)-optional
Allow it cook for 3mins
Blend your habanero pepper and tomatoes together
Add it to the onions/kobi and keep stirring
Allow it to cook for 5mins
Add the mackerel and stir
Allow that cook with the sauce for 3mins
Add the eggs –Do not stir right away until after at least 2mins
Your gardens eggs should be ready now, just remove from the pot and throw the water away.
Mash them in a the traditional #apotoyowa (DO NOT BLEND IT)
Add the mashed gardens eggs to the sauce and stir
Let sauce simmer for about 10 minutes on medium/low heat
Serve with yam, plantain or potatoes 🙌🙌🙌👌
