Okra Stew

Okra stew Recipe and procedure
2 cups of palm oil
4 cups of fresh okra (diced) /2 packs of frozen cut okra
1 lb.  Of any meat of your choice I prefer (crabs, beef with skin, goat meat)
1 lb. of catfish/ tilapia (optional)
1 medium size tomato (diced)
1 large onion (chopped)
2 teaspoons of tomato paste
2 oz. Fresh ginger (blended)
3 Tsp of pepper/ 4 fresh peppers will do
2 Beef Maggi Cubes
½ tsp adobo
½ tsp of bicarbonate of soda

Procedure
Season beef with ginger, a little bit of the chopped onions and Adobo salt (or season salt of choice)
Steam meat and crabs in a separate pot with water until it is tender
Boil the okra in a another pot with 1 cup of water and add the bicarbonate of soda (5mins)
In a separate pot, Add palm oil, allow it to heat for at least 5mins
Add the Maggi cubes and allow it to melt completely
Add the chopped onions and stir
Allow it to cook for 2 minutes
Add the pepper and keep stirring
Add Fresh chopped tomatoes
Allow it to cook for 5mins
Add tender meat, let it steam & stir frequently
Add the steamed beef and crabs including the broth/stock
Let it cook for 15-20 minutes
Add the okra and stir
Add salt to taste & stir frequently.
Let it cook for 20-30 minutes on medium to low heat
Service with BANKU or KENKEY
