Baked Tilapia with SUYA
Ingredients
4 medium tilapia
4 habanero pepper
3 tbsp. of adobo salt
7 oz. of ginger
3 oz. of onion
4 tbsp. of Suya pepper
3/4 cup of vegetable oil
Procedure
Remove all scales and cut off every fin

Wash the fish in water and rinse thoroughly
Blend the Ginger, Habanero pepper, onions with oil
Mix the Habanero pepper, ginger, onion , Suya and Adobo in a bowl
Cut 3 slits into the sides of the fish (on a cutting board) or cut the fish in pieces like I did.
PLEASE DO NOT PUT THE FISH IN YOUR HAND TO CUT THE SLITS. I CAN’T TELL YOU MY STORY. I KNOW WE AFRICANS DO THIS A LOT ….
Dip the whole fish into the marinade (mixture) for good seasoning
Then rub the remaining marinade ON THE FISH, make sure it enter the slits
Set your oven to 425 F, this should take about 25 minutes to warm.
Allow the fish to marinate
Splash some oil in the baking pan
Line-up the fish on the pan
Line-up the fish on the pan
Also splash the fish with some oil then just bake!!
Check on the fish every 10 minutes and use long tongs to turn the fish
In about 30 minutes, it should be done
Lower the temperature to 250 and allow the fish to bake for 10 minutes more just for a perfect look…
Serve with Kenkey, Banku, Rice, fried potatoes or yam
